General Snack Ideas:
  • Sliced apples with peanut butter (add raisin, blueberries or nuts for variations) use an apple corer and make apple rings!
  • Stuff 1/2 a date with peanut or cashew butter. Top with coconut or ground nuts.
  • Banana with nut butter.
  • Devilled eggs (made with homemade mayo) (Great for lunch with a salad)
  • Veggies and dip (mayo based dips with herbs, melted coconut oil with lime juice)
  • Popsicles!!!! (make with homemade fruit juices or additive free apple cider) (get popsicle makers from Tupperware or in a similar style where all the popsicles are in separate containers, as opposed to a single plastic mold for 4-6 popsicles)
  • Frozen grapes - they are AWESOME
  • Put a popsicle stick in a banana, freeze
  • Sardines (with oil and salt or water and salt ONLY)
  • Trail mixes (roast your own nuts, add raisins, unsweetened cranberries, unsweetened coconut flakes)
  • Boiled eggs
  • Spiced nuts - roast your nuts, add spices (we like oregano, basil and salt - Mommy likes cayenne also)
  • "Muesli cereal" Chop fruits (banana, peaches, etc) Add chopped nuts, raisins and unsweetened coconut flakes. (You can also add applesauce or a sauce made from honey and lime juice for variety)
  • Simple grated salads (grated apple and canned pineapple - canned in only its own juice) (grated apple and carrot)
  • Chopped veggies (Chop everything into similar sizes - use to top salads, in omelets, as stir fry, etc - peppers, squash, broccoli, cauliflower, carrots, whatever - keep chopped onion and garlic separately)
  • Applesauce (unsweetened, no additives if possible - vitamin C seems ok) with cinnamon

Gummy Fruit Snacks
1 cup mixed berries
1/4 cup water
1/2 cup applesauce
1/2 cup fruit juice (apple, cranberry, blueberry, whatever)
2 envelopes gelatin (1 envelope = 2 1/2 tsp)
In a small saucepan over medium heat, combine the berries and water. Bring to a boil and cook until berries are soft, about 5 minutes. Transfer to a blender or use an immersion blender to puree berries until smooth. Return to pot. Add applesauce and return to a boil, then remove from heat, cover and set aside.
In a large bowl, sprinkle gelatin over fruit juice and let stand one minute. Add hot fruit mixture and stir until gelatin completely dissolves, 3 to 5 minutes.
Pour into 8 x 8 inch glass or ceramic baking dish (or into molds, if you want to go that route). Refrigerate until firm, about 3 hours. Cut into blocks or shapes.

Baked Kale Chips
1 bunch (about 6 ounces) kale
1 tablespoon olive oil
Sea salt, to taste
Preheat oven to 300°F. Rinse and dry the kale, then remove the stems and tough center ribs. Cut into large pieces, toss with olive oil in a bowl then sprinkle with salt. Arrange leaves in a single layer on a large baking sheet (I needed two because mine are tiny; I also lined mine with parchment for easy clean-up but there’s no reason that you must). Bake for 20 minutes, or until crisp. Place baking sheet on a rack to cool.

Pumpkin Pie leather
Pumpkin - bake pie pumpkin at 350 for 45 minutes
honey
Cinnamon
Allspice
Ground cloves
A food dehydrator
Fruit leather sheets for your food dehydrator
A food processor/blender
Blend pumpkins, spices and honey - I do this by taste, so I added 1/2 cup honey, 1 tbsp cinnamon, 1/2 tsp allspice, 1/2 tsp ground cloves. Oil fruit leather sheets for food dehydrator, spread glop on it, dry at 120 for about 24 hours. Looks ugly, tastes yummy! I haven't tried it, but for those without a dehydrator, this may work in the oven - turn on the light (keep oven off) and let it sit.

Roasted Rosemary Nuts
2 tbsp rosemary
1/2 tsp cayenne
2 tsp - 2 tbsp honey
2 tsp salt
1-3 tbsp olive oil
Preheat oven to 375. Roast nuts 10 min. Remove from oven and toss in rest of ingredients
