Method one:
2 Tbsp grated fresh ginger
2 tsp grated lemon rind
4Tbsp honey
1 c boiling water
1 qt sparkling water
Steep ginger and lemon in water for 15 minutes. Strain. Add honey. Serve with sparkling water.
Method two:
3 Tbsp grated fresh ginger
1/4 tsp yeast
3/4 cup honey
Heat honey with an equal amount of water until honey dissolves. Let ginger steep in honey water until cool. Strain off ginger. Pour into empty 2 liter soda bottle. Ferment at room temperature for 2 days. Check occasionally and crack open bottle to relieve pressure if necessary. Store in fridge - use within the week.
